Easy Pumpkin Bread

Each year as the seasons cycle, we get excited for our annual re-acquaintance with all the flavors of autumn -- apples, squash, and especially pumpkin! This bread is easy to make and smells deliciously of pumpkin spice!
Directions
- Preheat the oven to 350°F. Grease baking pans; line with parchment paper.
- In a large bowl, mix the sugar, water, oil, pumpkin puree, and eggs together with an electric mixer until all is well combined and the oil emulsified.
- In a smaller bowl, whisk the dry ingredients until evenly combined; flour, soda, salt, cinnamon, nutmeg, cloves and ginger.
- Add half of the flour mixture to the pumpkin mixture, and mix until just combined. Add the remaining flour and, once again, mix until just combined.
- Pour the batter into the prepared pans. Fill three-quarters full.
- Bake until an inserted toothpick comes out clean. If batter shows on the toothpick, bake an additional five-minute increments until done. For a standard loaf pan, bake 70-75 minutes.

- 1 cup canola oil
- 1 can (15 oz.) pumpkin puree
- 4 eggs
- 3-1/2 cups all-purpose flour
- 2-1/4 teaspoon baking soda
- 1-1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon cloves
- 1/4 teaspoon ginger
